What is freeze drying?
Through the use of an industrial freeze-dryer, the temperature is lowered to 40 degrees below zero and then a vacuum is created around the food. As the trays warm and the food remains frozen, a process called sublimation occurs, removing approximately 95% of water from the product. Due to this, candy and snacks can transform into a variety of unique colours, intense flavours, and rare shapes yet maintain the nutrient value and caloric count. The whole process takes between 20-36 hours to complete, depending on the moisture content.
How long does freeze dried food last?
When properly stored, freeze dried food can last 20-25 years! The specialized oxygen absorbers that are added to each bag lengthen shelf life and maintain freshness. Even astronauts use freeze dried food on missions to space to reduce weight and prevent spills.
